PETALING JAYA, Jan 4 -- Fruit pies are one of my weaknesses, especially apple pie.
Living in a tropical country means that you need to find out what types of fruits are in season when you are planning to make fruit pie. Especially fruits like cherries, strawberries, blueberries and cranberries.
Sure, you can buy dried ones but fresh ones are always better. Luckily, you can find fresh cranberries at this time of the year!
The first time I came across cranberries was when I heard that its juice is the best natural remedy for urinary tract infections. I know... what a strange way to discover a fruit!
Needless to say, at that time all I tried were cranberry supplements and cranberry juice.
Recently a friend of mine alerted me that fresh cranberries are sold in Malaysia during December so I made a mad dash to the supermarket to buy some.
Although they were expensive, I liked them; red rubies that can be sour and sweet at the same time.
I found this healthy cranberry pie recipe through a blog that promotes fitness and a healthy diet. This cranberry pie recipe does not use butter but coconut oil instead. It also has very few ingredients. It’s all about quality, not quantity!
If cranberries are out of season by the time you want to make this pie, fret not because you can use dried ones too.
Cranberry pie
Ingredients
2 eggs
1/2 cup brown sugar, reserve a little to sprinkle with cranberries
1 cup all-purpose flour
2/3 cup coconut oil
2 cups fresh cranberries
1/2 cup walnuts (chopped)


Method
1. First preheat oven to 160C. Next, whisk the eggs in a large mixing bowl with the brown sugar until combined.
2. Add flour and coconut oil into the egg mixture and stir well.

3. Use the coconut oil to grease a 12-inch baking tray. Place the cranberries on the tray and sprinkle brown sugar on top. After that, add the walnuts.
4. Pour the egg, brown sugar, flour and coconut oil mixture into the baking tray on top of the cranberries and walnuts.
5. Place the tray in the oven and bake for 45 minutes.

6. Once it is baked, remove from oven and let it cool for 15 minutes.
7. Serve just like that or with ice-cream or Greek yoghurt.
