SINGAPORE, July 6 — With the festivities going on around us, why not join in the spirit and try out this recipe for belacan fried chicken courtesy of the team at The MeatMen YouTube channel.
You’ll need these ingredients for this recipe that serves four: 8 pairs of chicken wings and drumlets, 50g of belacan (shrimp paste), 1/2 tsp of white pepper powder, 1 tsp of coriander powder, 1 tsp of sugar, 1/2 tsp of salt, 4 tbsp of oil and extra oil for deep frying.
Mix and grind the belacan, white pepper powder, coriander powder, sugar, salt and oil in a pestle and mortar till it forms into a paste.
Next, place the chicken and belacan paste in a large mixing bowl. Mix all the ingredients well, making sure to coat and rub the paste into the chicken. Leave to marinate for 1-2 hours.
Deep fry the chicken wings until light brown, remove and drain. Leave to rest for 1 minute.
Now turn up the heat slightly and fry the chicken wings again. Once golden brown, remove and drain. Serve with a sauce of your choice, enjoy!
