MADRID, Oct 1 — The chef behind a Spanish restaurant currently listed as one of the top 10 dining destinations in the world is on a quest to explore the humble world of candy.

And given his track record for culinary innovation, it’s safe to bet that the outcome is sure to be a fascinating one.

Chef Andoni Luis Aduriz of Mugaritz restaurant in San Sebastian, Spain has launched “thecandyproject.org” and is soliciting feedback from consumers around the world about their local candy culture in an online questionnaire.

What’s the most popular candy flavour in your country? Are there any candy traditions in your country? These are among some of the subjects respondents are invited to think about and answer in their own words. That is, unlike most surveys that offer a selection of choices, questions are open-ended and allow participants to answer in long form.

Though exact details on the final outcome are scarce, the site says that information collected will be used to help chefs and researchers understand how candy has evolved around the world.

The project is helmed by a trailblazer in the culinary world. In addition to creating sensory and surprising cuisine, Aduriz was one of the first in the industry to come up with the idea of creating an original soundtrack to accompany his dishes.

Mugaritz BSO was a five-year project that enlisted Spanish artist Felipe Ugarte to compose the score. The entire process has also been captured in a documentary, CD, and translated into literary interpretations.

Mugaritz is listed as the sixth best restaurant in the world by Restaurant magazine.

The candyproject.org is a collaborative research project between players like Mugaritz, the Slow Food Movement and the University of the Basque Country. — AFP-Relaxnews
