MUMBAI, Nov 9 — Are you bored of the traditional desserts and looking for something new this Deepavali?
Well, thanks to YouTube channel CookingShooking, you can now whip up this delicious Mithai Patakha Parfait (sweet parfait). This parfait includes mini Gulab Jamoons (sweet dessert made of milk), Pepper Shrikhand (shrikhand is a sweet dish made of strained yogurt) as well as Popcorn Chikki (sweet generally made from groundnuts and jiggery).
There are three parts to this parfait. For the Pepper Shrikhand, you’ll need yogurt, black pepper, powdered sugar and screwpine essence (pandan flavouring).
For the Popcorn Chikki, you’ll need popcorn kernels, oil and sugar. For the parfait, you’ll need mini Gulab Jamuns, popping candy, crushed pistachios and Walnuts.
To prepare the Pepper Shrikhand, transfer the yogurt to a muslin lined colander and let it drain overnight in the fridge. Add the crushed black pepper, sugar and pandan essence to the strained yogurt to a mixing bowl. Mix well and transfer into disposable piping bags for easier piping to serving glasses.
To prepare the Popcorn Chikki, stir sugar continuously until the it starts to caramelise and add the popcorn, stir well. Transfer the popcorn mixture to the greased tray and using a similar tray press the chikki from top.
After the chikki is cooled, smash into smaller bite size chunks. Alternatively, Caramel Popcorn can be used to avoid making this at home.
To assemble the Parfait, pipe the Pepper Shrikhand in the bottom of a serving glass, place a layer of gulab jamuns and scatter some crushed popcorn chikki.
Pipe another layer of Shrikhand, add a few more mini gulab jamuns, then some nuts and some popping candy, cover the popping candy with a little more of nuts. And voila, you’ve got yourself an amazing Deepavali dessert that your guests will love!
