Our three favourite places to buy rempeyek
Malay Mail

KUALA LUMPUR, June 12 — One piece is never enough when it comes to the crispy rempeyek. Originally from Indonesia, these savoury crackers are usually studded with peanuts, anchovies (ikan bilis) and cumin seeds. Some also top the crackers with green beans or dhal.

It’s prepared from a thin runny batter made with rice flour, coconut milk and water. You also add ground spices like fennel, cumin and coriander seeds in the batter.

Some recipes also call for slaked lime or air kapur sirih. That’s the secret of getting the crackers to be extra crispy. During the frying process, you may need to add a little liquid to dilute it or else your cracker’s texture will be too hard and thick.

You can also add shredded curry leaves or kaffir lime leaves to the crackers for additional flavour.

Rempeyek is usually made in the Malay villages where it’s become a small cottage industry for the villagers to earn extra income. These are usually brought to the bigger cities by enterpreneurs who buy them in bulk and resell them. You can usually find a supplier within your office or friend’s office.
