NEW YORK, May 2 — Can’t decide if you want to have banana bread or cheesecake? How about something that combines both!
This clip form YouTube channel Tasty will show you how you can prepare cream cheese-filled banana bread muffins right at home.
For the recipe, you’ll need these ingredients to prepare the bread batter: 1 beaten large egg, 1/2 cup of light brown sugar, 1/4 cup of granulated sugar, 1/2 cup of softened butter, 1/4 cup of sour cream (or you can also use Greek yogurt), 1 tsp of vanilla extract, 2 ripe bananas, 1 cup of all-purpose flour, 1/2 tsp of baking soda and 1/2 tsp of baking powder.
To prepare the cream cheese filling, you’ll need: 1 large egg, 4 ounces of softened cream cheese, 1/4 cup of granulated sugar and 3 tbsp of all-purpose flour.
Before you begin, preheat the oven to 350ºF/180ºC. For the bread mixture, combine the egg, sugars, butter, sour cream and vanilla in a large mixing bowl. Whisk together with the mashed bananas.
Next add the flour, baking powder, baking soda and mix lightly to combine. Set the mixture aside.
For the cream cheese filling, mix the egg, cream cheese, sugar, and flour in a small bowl.
To assemble the muffins, spoon a layer of the bread batter into a greased muffin tin. Next spoon a layer of cream cheese filling and then top off with another layer of bread batter.
Bake the muffins for 20-25 minutes. You’ll know that the muffins are done when a tooth pick inserted in the centre comes out clean. Enjoy!
