NEW YORK, March 17 — Chicken, chips and cheese? Yes please, especially if it’s a recipe for BBQ chicken nachos!

You’ll need these ingredients for this recipe that can serve four: 1 tbsp of canola oil, 2 chicken breasts (finely diced), 1/2 tbsp. of kosher salt, 1/2 tbsp of freshly ground black pepper, 1 tbsp of garlic powder,1 tbsp of chilli powder, 3/4 cup of barbecue sauce, 1 bag of tortilla chips, 2 cups of shredded cheese blend, ½ a finely sliced red onion, 1 diced tomato, 8 bacon strips (cooked and crumbled), 2 tbsp of finely chopped parsley, 1/2 cup of sour cream and 1 diced avocado.
Before you begin, preheat the oven to 350°F or 180°C. Next, heat the oil in a pan over high heat and cook the chicken with salt, pepper, garlic powder, and chilli powder for two to three minutes.
Add the barbecue sauce to this mixture and cook until the sauce has reduced by about half, which may take about five minutes. Remove the pan from the heat when done.
Spread out two large handfuls of tortilla chips in a large skillet. Then layer with half of the barbecue chicken, followed by half of the cheese, onion, tomato, bacon, and parsley. Repeat with the remaining ingredients. Bake for 15 minutes.
Before serving, drizzle the sour cream and sprinkle the avocado on top. Enjoy!
