LOS ANGELES, Nov 24 — If you’re looking for an elegant and delicious dessert, you’ll want to try out this no-bake white chocolate strawberry mousse cake recipe courtesy of The Home Cooking Adventure.
Just imagine, a crispy crust, a soft white chocolate mousse layer followed by a fruity mousse layer and topped with fresh strawberries which also bring a bit of texture and flavour. Sounds amazing, well, here’s what you’ll need to get started.
For the crust ingredients, you’ll need: 250g of digestive biscuits or graham crackers, 80g of coconut oil or melted butter. For the white chocolate mousse, you’ll need: 200g of white chocolate, 350g of whipping cream, 1/2 tbsp of gelatine powder, 2 tbsp of cold water.
For the strawberry mousse, you’ll need 300g of strawberries, 50g of sugar, 1/2 tbsp of gelatine powder, 2 tbsp of cold water, 200g of whipping cream and fresh strawberries for topping.
First things first, you’ll need to prepare the strawberry sauce so it has time to cool before preparing the strawberry mousse. Cut the strawberries in quarters and place in a small sauce pan with the sugar until the sugar is dissolved. Remove from heat and puree using a blender. Set aside while you prepare the gelatine.
Dissolve gelatine in cold water and leave aside for five to 10 minutes. Place over low heat just until the gelatin dissolves and then pour it over strawberry puree. Let the strawberry mixture cool at room temperature.
For the crust, blend the digestive biscuits or graham crackers until crumbs form. Add melted coconut oil or butter and process until completely combined. Press the mixture into the bottom of a non-stick 8 inch (20cm) springform pan. Refrigerate until you prepare the white chocolate mousse.
In a heat proof bowl, melt the chocolate and whipping cream over a saucepan with simmering water on low heat. Repeat gelatine process as earlier and pour over the melted chocolate mixture. Let cool completely.
Whip the remaining cold whipping cream until stiff peaks form. Add melted chocolate mixture and mix until well combined. Pour the chocolate mousse over the crust and refrigerate for about 15-20 minutes to set.
To prepare the strawberry mousse, whip the cold whipping cream until stiff peaks form. Add the cooled strawberry mixture and mix until well combined. Pour over the set white chocolate mousse.
Refrigerate overnight to set before serving.
