KUALA LUMPUR, July 12 — There’s something decadent about eating oysters with fried eggs. Maybe it’s the briny taste of the plump morsels mixed with potato starch, which transforms the ordinary fried egg into a luxurious item.
Top notch cooking skills are needed to ensure that consistency of the starch is perfect; sticky with a slight chew. What makes the oyster omelette (oh chien) incredibly addictive is the contrast of textures — fresh juicy oysters paired with a sticky fried egg and starch combination.
In the Klang Valley, there are many interpretations of the oyster omelette. Most of them are eaten as a supper item at roadside stalls or even the pasar malam.
Some restaurants even serve them as a side dish for lunch or dinner. All of them are topped with fresh coriander leaves and served with a mild tasting chilli sauce to enhance the taste of the omelette.

Look for this stall opposite Marvel Beauty House, which fries up the Pulau Ketam version. The oyster omelette may look like unattractive clumps but as you bite through, you get a cloud-like texture of starch and egg. Pair this with the intoxicating aroma of pan-fried juicy oysters and you will be in oyster heaven. The stall also does a fried lala version, which is less fragrant but has the same texture achieved by continously stirring and cutting up the omelette with a vigorous wok action. There are tables and seats available at the back of the stall for you to wait comfortably for your oyster omelette.

Find this stall directly opposite Wonderful Steamboat. It sells a variety of Japanese pizzas and their take on the Taiwanese oyster omelette minus the tomato sauce. Here the omelette is cooked in a square mould where the starch is first cooked then the oysters, egg and chilli powder added. It’s a lighter tasting omelette, which has a healthier touch with the addition of baby Gem lettuce leaves. The stall also sells a Japanese oyster omelette version, similar to okonomiyaki, which is topped with bonito flakes and drizzled with the sweet brown okonomi sauce and Japanese mayonnaise.

For an upscale version, the fried eggs with oysters at this Hakka restaurant is superb. Here it’s prepared sans potato starch to resemble a fluffy omelette with a mix of large and medium-sized oysters. What makes the omelette exceptional is how each bite of the omelette has the briny taste of the oysters mixed with chopped coriander. This MSG-free restaurant also serves deep fried oysters encased in a thin crispy batter, and fried oysters with black bean sauce and vegetables. The side dish is also available at all their other outlets.

Dubbed “Klang Hilton” for its high prices, this place is popular with Klang locals for good eats like steamed pomfret, fried noodles and oh chien. Come early to avoid fighting with the crowd for a table at this nondescript restaurant with a faded signboard. Their oh chien is a decadent dish where the ratio of oysters overwhelms the egg completely. It’s skillfully prepared where the oysters are coated with the starch for a silky texture and the fried egg is fluffy. Enhancing the whole ensemble is chopped leeks for a touch of sweetness.

You will be spoiled for choice at this spot as it is full of stalls selling all kinds of eats like char kway teow, popiah and the list goes on. This stall’s oyster omelette is well fried with fluffy bits that have a distinct garlic taste and small sized oysters.
Moreover it’s not too starchy with less oil. Pair it with the mild chilli sauce with a heavy garlic taste for a tummy satisfying supper.
