Shake Shack and chef Massimo Bottura in Emilia burger London collab

LONDON, Oct 31 — After a wildly successful stint in New York, the man who’s been called Italy’s best chef will be repeating his collaboration with Shake Shack, this time across the pond for fans in London.

For one day only, Michelin-starred chef Massimo Bottura will be selling a limited run of 500 burgers he created specifically for the burger chain, this time at the Covent Garden location.

The Emilia burger, named after the Emilia-Romagna region of Italy, was developed by Bottura and the burger chain’s culinary director Mark Rosati, and features 100 per cent Aberdeen Angus beef, ground with cotechino sausage, Parmigiano Reggiano, all topped with salsa verde and Villa Manodori balsamic mayonnaise, made with the chef’s own artisanal vinegar.

“London is an incredible city, so vibrant and accepting of different cuisines. I can’t imagine a better place to serve my burger in evolution,” said Chef Bottura in a statement.

The partnership is part of a Bottura’s global book tour to promote his new cookbook, “Never Trust a Skinny Chef.” On Columbus Day, Bottura also handed out Emilia burgers to customers at the chain's flagship Madison Square Park location before it closed for renovations.

It also marks Shake Shack’s latest chef collaboration: To mark its 10th anniversary this summer, the burger chain that enjoys a cult following in the US tapped some of New York’s hottest chefs like April Bloomfield, Daniel Boulud, David Chang and Daniel Humm to create a series of limited edition burgers.

The Emilia will sell for £8.25 (RM43.40) November 9 at the Shake Shack in London.
