KUALA LUMPUR, Aug 5 — Another day, another bowl of pork noodles.
But wait, this isn't any generic bowl but a bountiful one that feels bottomless.
First, make your way to Jinjang Utara. Preferably go early in the morning to this stall, which is hidden inside a refurbished corner shop standing amongst older shops selling pan mee.
Your mission is to score the sought-after pig’s kidney or those smooth pieces with a scored pattern that yields a spongy texture when bitten into.
Visit this place for lunch and you might miss out on the pig’s kidney.
This stall sits across from the wet market in Jinjang — a network of stalls lining two lanes — offering super-fresh, beautifully trimmed pork, vegetables, seafood and more.
The quality of the meat and offal is evident in this bowl, which has a slightly sweet taste as it bobs in the broth with emulsified fats.
Minced pork shaped in patties offer a cloud-like bite that melts in your mouth. Divine!
The liver is cut thick and wonderfully tender inside, just like how I like my liver prepared.
It reminds me of that one bowl I always eat in Singapore — a pilgrimage of sorts I make to the heart of Little India for the famous Mui Siong Minced Meat Noodles.
Even the sliced pork and the sought after pork loin aren't harsh, dry bites but smooth and juicy.
One area where they falter is the egg; it’s cooked to a firmer texture when an oozy yolk is desired.
The basic bowl of pork noodles is priced at RM10 (small) and RM11 (big) but the bowls with pork loin and pig's kidney are RM15 (small) and RM16 (big).
As you finish every item in the bowl down to the last drop of broth, you won’t feel an overwhelming thirst or that sickly sweet aftertaste; it's just a satisfying experience that has you plotting another visit.
That's the true trademark of a great bowl of pork noodles.
