KUALA LUMPUR, Feb 22 — The trick when it comes to barbeques is finding simple yet delicious foods to serve to your guests. Here’s one dish that would definitely add some exotic Balinese flavours to your barbeque. 

Oh, and did I mention it's so easy too? Corn slathered with kaffir lime leaves-infused butter, then brought to the barbeque. Simple, healthy and oh-so-delicious.

This Balinese style street food makes full use of the unique citrus fragrance and the lemony flavour of the kaffir lime leaves to add another layer of complexity to the sweetness of the corn. The mingling of scents from the corn and the kaffir lime leaves will pique just about anyone’s interest, and when they’ve tried it their taste buds will truly thank them.

The extremely fragrant kaffir lime leaves do not serve solely as a scenting agent. Their health benefits are another reason they’re included in the recipe. Kaffir lime leaves are said to be able to aid in digestion besides purifying our blood.

Fragrance wise, the tangy aroma is said to be able to induce a feeling of calm which can be especially helpful for stressed-up people.

Do remember to use mature leaves as compared to younger ones though as they possess more flavour and aroma. Together with the sweet corn cobs, this is one barbeque dish your guests are never gonna forget!

Corn with Kaffir Lime Leaves

Prep time: 5 minutes

Cooking time: approximately 30 minutes

Serves: 4

 

4 ears of fresh corn, in their husk

4 tablespoons salted butter

Plenty of kaffir lime leaves, rinsed and finely chopped

 

1. In a bowl, mix salted butter with finely chopped kaffir lime leaves. Leave to infuse for 30 minutes.

2. Meanwhile, prepare your BBQ pit. Ensure grill is extremely hot.

3. Open up the corn from the husk but do not remove the husk. Brush butter and kaffir lime leaves on corn until it is properly coated.

4. Cover corn with husk again and place  on the grill. Turn the corn every 10 minutes, until the husk is charred on all sides.

5. Remove from grill and let it sit for 5 minutes before serving.
